Job Description:

St Julien Hotel & Spa is looking for a creative and passionate Pastry Chef who excels both in their culinary and leadership abilities! This person will be responsible for the production of pastry items served throughout the Hotel, including Jill's Restaurant, T-Zero, and Banquet/Catering functions. Our ideal candidate should have a depth of knowledge and experience and must be able to create items such as plated desserts, cakes, breads, and dessert pastries - including vegan/gluten-free varieties.

Essential Job Functions:

-Effectively interview, hire, schedule, train, and address associate performance.
-Hold staff accountable to all policies and procedures of the Hotel.
-Remain knowledgeable of all dessert menu offerings and be able to assist any Pastry associate.
-Prepare cakes, pastries, cookies, pies, creams, icings, mousses, sauces, and batters used for hot and cold desserts/pastries.
-Supervise, direct, and assign work of Pastry Cooks.
-Collaborate with other Chefs in the planning and creation of new pastries/desserts.
-Create accurate recipes that include portion sizes, pricing, and costing.
-Coordinate with Banquet Chef and consult BEO's for the preparation of items for all Banquet/Catering events.
-Maintain updated descriptions/plate-up charts of all dessert menu items.
-Estimate food requirements, place product orders from suppliers, requisition food, and create pars.
-Enforce proper sanitation/health code procedures.
-Uphold quality standards by inspecting and tasting all food before serving, adjusting flavors and presentation as needed.
-Treat associates with respect and dignity in regards to scheduling, diversity, appreciation/recognition, suggestions for improvement, and other pertinent job-related issues.
-Adhere to St Julien's environmental commitment and Zero Waste goals.
-Other duties as required by manager.
